Soup (Pho) with Chicken Dumplings
Dumplings
300g Chicken Mince
1 Tblspn chopped Corriander
1Tblspn chopped Basil
1 Chilli, finely chopped
1 tspn minced fresh ginger
1 tspn Fish Sauce
Pho (Soup)
8 cups Chicken Stock or Chicken Bone Broth (homemade preferably)
2 tblspn shredded ginger
2tbspn fish sauce
1 stalk Lemongrass finely chopped
2 -3 garlic cloves
1 small daikon radish sliced
2 small carrots sliced
6 spring onion
1 small red chilli slices
Garnish/Salad
1 cup mint leaves
1 cup coriander leaves
1 cup beansprouts
2 spring onions
Method
Combined chicken mince herbs, chilli, ginger and fish sauce. Mould mixture into 18 balls
Next prepare Pho (Soup) Bring stock to boil add ginger, fish sauce, lemongrass and garlic; reduce to simmer for 3 -5 minutes.
Add dumplings, vegetables, onions and chillies. Cook 3 – 5 minutes until dumplings are cooked. Laddle into bowls and dress with garnish (salad) ingredients.
